Slow-cooked to perfection, the rib tips are then glazed with a rich pineapple bourbon sauce, creating a harmonious explosion of tastes in every bite.

Ingredients:

- 2 lbs pork rib tips

- 3 tbsp Claibe’s Spiced Rub

- 1 cup pineapple juice

- 1/2 cup bourbon

- 1/4 cup brown sugar

- 1/4 cup soy sauce

- 2 tbsp apple cider vinegar

- 2 cloves garlic, minced

- 1 tsp ground ginger

- 1/2 tsp red pepper flakes (optional)

- Fresh pineapple slices (for garnish)

- Chopped fresh cilantro (for garnish)

Preparation Instructions:

1. Marinate the Rib Tips:

   - In a large bowl, combine pineapple juice, bourbon, brown sugar, soy sauce, apple cider vinegar, minced garlic, ground ginger, and red pepper flakes. Mix well until the sugar is dissolved.

   - Add the pork rib tips to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

2. Prepare the Dry Rub:

   - Before cooking, remove the rib tips from the marinade and pat them dry with paper towels.

   - Generously coat the rib tips with Claibe’s Spiced Rub, ensuring an even layer on all sides. Let them sit at room temperature for about 30 minutes to absorb the flavors.

Cooking Instructions:

1. Smoking the Rib Tips:

   - Preheat your smoker to 225°F.

   - Place the rib tips directly on the smoker grates and smoke for 2-3 hours, or until they reach an internal temperature of 160°F. This slow cooking process allows the Claibe’s Spiced Rub to create a flavorful crust while the meat becomes tender and smoky.

2. Glazing the Rib Tips:

   - In a small saucepan, bring the remaining marinade to a boil, then reduce the heat and let it simmer until it thickens into a glaze (about 10-15 minutes).

   - During the last 30 minutes of smoking, brush the rib tips with the pineapple bourbon glaze every 10 minutes, allowing the sauce to caramelize and enhance the smoky flavor.

Serving Suggestions:

- Arrange the rib tips on a platter and garnish with fresh pineapple slices and chopped cilantro.

- Serve with a side of grilled vegetables and a refreshing pineapple coleslaw to complement the sweet and smoky flavors.

- Pair with a chilled glass of bourbon lemonade or a tropical fruit punch for a complete BBQ experience.
