Smoked Beef Tenderloin Using Claibe's SPG All Purpose Rub




Indulge in a perfectly smoked beef tenderloin that's juicy, tender, and bursting with flavor. The Claibe's SPG  All Purpose Rub, with its harmonious blend of salt, pepper, and garlic, elevates this dish to a new level, ensuring every bite is a mouthwatering experience. Perfect for any occasion, this recipe uses an offset smoker or pellet grill to achieve the ideal medium rare finish but any smoker can be used.


Ingredients


1 whole beef tenderloin (about 45 pounds)

1/4 cup Claibe's SPG  All Purpose Rub

2 tablespoons olive oil

2 cloves garlic, minced

Fresh rosemary sprigs (optional)

Freshly ground black pepper (optional)

Coarse sea salt (optional)


Preparation:


  • Trim the beef tenderloin of any excess fat and silver skin.

  • Rub the tenderloin with olive oil, ensuring it's evenly coated.

  • Generously apply Claibe's SPG  All Purpose Rub all over the tenderloin.

  • For added flavor, sprinkle fresh rosemary sprigs, freshly ground black pepper, and coarse sea salt on the tenderloin.

  • Allow rub to rest for a minimum of 30 minutes.


 The Cook:


  • Set up your offset smoker or pellet grill for indirect cooking and preheat to 225°F (107°C).

    

  • Smoke to an internal temperature of 130°F (54°C) for medium rare. This usually takes about  1-1/2 - 2 hours.


Searing (Optional but Recommended):


  • Once the tenderloin reaches the desired internal temperature, increase the smoker or grill temperature to high (around 450°F/232°C). Sear the tenderloin on all sides for a couple of minutes until you achieve a nice appearance. A cast Iron skillet or griddle plate works well to minimize grill marks.


Rest the Meat:


Remove the tenderloin from the smoker and let it rest for at least 15-30 minutes before slicing. This allows the juices to redistribute throughout the meat.


 Serving Suggestions


 Slice the beef tenderloin into 1/2 to 3/4 inch thick slices.

 Serve with a side of roasted vegetables, garlic mashed potatoes, or a fresh garden salad.

 Pair with a full bodied red wine like Cabernet Sauvignon or Merlot.
