Smoked Beef Tenderloin Tacos with Claibe's Signature Steak Rub



Elevate your taco night with our Smoked Beef Tenderloin Tacos, slow cooked to perfection on an offset smoker or pellet grill using Claibe's Signature Steak Rub. The tenderloin absorbs the smoky essence and rich spices, creating a flavorful filling that pairs beautifully with fresh toppings and warm tortillas.


Ingredients:


1 whole beef tenderloin (about 4-5 pounds)

3 tablespoons of Claibe's Signature Steak Rub

2 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper, to taste

12-16 small corn or flour tortillas


Toppings: diced onions, chopped cilantro, sliced radishes, lime wedges, salsa, avocado slices




The Prep:


Trim any excess fat and silver skin from the beef tenderloin. Pat it dry with paper towels.


In a small bowl, mix Claibe's Signature Steak Rub with olive oil, minced garlic, rosemary, and thyme. Rub this mixture generously over the entire surface of the tenderloin. Season with additional salt and pepper if desired.


Cover the seasoned tenderloin with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or up to 24 hours for deeper flavor.


The Cook:


Preheat your offset smoker or pellet grill to 225°F. Use your preferred wood or pellets (such as oak, hickory, or mesquite) for a rich, smoky flavor.


Place the marinated tenderloin on the smoker grates. Close the lid and smoke for about 2-3 hours, or until the internal temperature reaches 130-135°F for medium rare.


Remove the tenderloin from the smoker and let it rest for 10-15 minutes. This allows the juices to redistribute, ensuring a moist and flavorful result.


Slice the tenderloin into roughly 1/2 - 3/4 against the grain. Keep the slices warm until ready to serve.


Serving Suggestions:


Warm the tortillas on the grill or in a skillet. Fill each tortilla with a generous portion of sliced smoked tenderloin. Top with diced onions, chopped cilantro, sliced radishes, and avocado slices. Squeeze fresh lime juice over the top and add your favorite salsa.


Side Dishes: Serve with Mexican rice, black beans, or a refreshing coleslaw.

Beverages: Pair with a cold Mexican beer, a margarita, or a refreshing agua Fresca.
