Sizzling Filet Mignon Bites with Horseradish Cream Sauce



Elevate your appetizer game with these luxurious Filet Mignon Bites, each wrapped in smoky bacon and seasoned to perfection with Claibe's Signature Beef Rub. Grilled to perfection and served with a tangy horseradish cream sauce, these bites are the epitome of elegance and flavor, perfect for any festive outdoor gathering.


Ingredients:


1 pound beef tenderloin

1/2 pound thin sliced bacon

2 tablespoons Worcestershire sauce (for basting)

2 tablespoons Claibe's Signature Beef Rub

6 ounces Greek yogurt

2 tablespoons prepared horseradish

Salt and pepper to taste

Prep the Filet:


  • Pat the beef tenderloin dry and cut it into 1 inch cubes.

  • Cut each strip of bacon in half and wrap it around each steak cube. Secure with a toothpick.

  • Season each side of the steak cubes with Claibe's Signature Beef Rub, salt, and pepper.


Prepare the Sauce:


  • In a medium bowl, combine Greek yogurt and prepared horseradish.

  • Season with salt and pepper to taste and refrigerate until ready to serve.


The Cook:


  • Preheat your grill to medium high heat (about 450°F or 232°C).

  • Place the bacon wrapped filet mignon bites directly on the grill.

  • Sear the steak bites for 1-2 minutes on each side to develop a nice crust and ensure the bacon gets crispy.

  • Reduce the heat to medium and continue grilling, turning occasionally, until the steak bites reach your desired level of doneness (about 6-8 minutes for medium rare).

  • Brush the steak bites with Worcestershire sauce during the last minute of grilling for an added layer of flavor.
