Shrimp Tacos with Zesty Avocado Cream Sauce


Imagine biting into juicy, perfectly seasoned shrimp kissed by Claibe’s Hog Heaven Pork Rub. These shrimp tacos burst with smoky-sweet flavors, while the vibrant avocado cream sauce adds a refreshing and spicy kick. This dish brings together bold seasoning and creamy textures for a taco experience that will have you coming back for seconds!


Ingredients:


For the Shrimp:


  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp Claibe’s Hog Heaven Pork Rub

  • 1 tbsp olive oil

  • 8 small corn or flour tortillas

  • Fresh lime wedges, for serving


For the Avocado Cream Sauce:


  • 1 ripe avocado

  • 1/4 bunch of cilantro, roughly chopped

  • 12 oz pickled jalapeño slices

  • 1 cup sour cream

  • 4 oz cream cheese

  • Juice of 1 lime


The Prep:


  1. Season the Shrimp: In a bowl, toss the shrimp with olive oil and generously coat them with Claibe’s Hog Heaven Pork Rub. Set aside for 15 minutes to allow the flavors to absorb.

  2. Avocado Cream Sauce: In a blender or food processor, combine the avocado, cilantro, pickled jalapeños, sour cream, cream cheese, and lime juice. Blend until smooth and creamy. Adjust seasoning with salt to taste if needed. Set aside.


The Cook:


  1. Grill or Sauté the Shrimp: Preheat your grill to medium-high heat. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque. The Hog Heaven Pork Rub will caramelize slightly, adding depth and complexity to the shrimp.

  2. Warm the Tortillas: On the grill or stovetop, quickly warm the tortillas until they are soft and pliable.


Assembling the Tacos:


  • Lay a few shrimp in each tortilla.

  • Generously drizzle the avocado cream sauce over the shrimp.

  • Garnish with fresh cilantro, a squeeze of lime juice, and extra pickled jalapeños if desired.
