"Ocean Fresh Ceviche with a Burst of Citrus & Spice 🌊🍤🌶️"



INGREDIENTS:


For the Ceviche:


  • 1 lb shrimp, peeled and deveined

  • 1/2 lb fresh white fish (such as cod or tilapia), diced

  • 1/2 cup thinly sliced purple onion

  • 1/2 cup diced tomatoes

  • 1/4 cup fresh cilantro, chopped

  • 1/2 cup mandarin orange slices, cut into small pieces

  • Juice of 4-5 limes (enough to cover the seafood)

  • Salt and pepper, to taste

  • 1/2 cup thinly sliced cucumber 🥒 for that refreshing crunch



For the Spicy Jalapeño Guacamole:


  • 2 ripe avocados

  • 1-2 fresh jalapeños, finely chopped (adjust for heat preference)

  • Juice of 1 lime

  • 1/4 cup diced red onion

  • 1/4 cup cilantro, chopped

  • Salt, to taste

To Serve:

  • Crispy corn tostada shells 🌮



THE PREP:


Marinate the seafood:


  • Combine shrimp, diced white fish, and thinly sliced cucumber in a large bowl. Cover with lime juice, and add salt and pepper. Stir in purple onion, diced tomatoes, cilantro, and mandarin orange slices. Let the mixture marinate in the fridge for 30-60 minutes, or until the seafood turns opaque and flavors blend with the cucumber.


Make the spicy guacamole:


  • In a separate bowl, mash the avocados with lime juice. Stir in red onion, cilantro, and jalapeños. Season with salt and a dash of SPG All Purpose seasoning for that perfect blend of savory and spicy flavor!


THE SERVE:


  • Spread a generous layer of the spicy guacamole on crispy tostada shells.

  • Top with your freshly strained marinated ceviche.

  • Garnish with additional cucumber slices and cilantro for an extra fresh, crunchy finish.

  • Serve immediately for the best flavor and crunch!



🔥 Pro tip: For an even crisper crunch, chill the cucumber slices in ice water for a few minutes before adding to the ceviche!
